Grey Oyster Mushroom

(Pleurotus ostreatus)

This mushroom grows in bunches and has a grey shell-shaped top and stem. Because of the soft and meaty structure and taste it is very popular with vegetarians.

Let them drain on a piece of kitchen paper, cool and put them in a freezer bag or container in the freezer. They can be kept for about three months.

Gently clean oyster mushrooms with a brush or a damp paper towel. Cut the tough stem away and cut the top into slices or quarters. Do not clean the oyster mushroom under running water or by leaving it in water. They retain water and that leads to a loss of flavour.
